Grilled Tofu and Vegetable Salad
Tofu mayonnaise and a touch of toasted sesame seeds provide the distinctive flavor to this salad.
Ingredients (4 servings)
- 2 cubes (1072 oz, 300g each) firm tofu, well drained
- 1 T vegetable oil V2 t sesame oil
- 3/4 C Tofu Mayonnaise
- 8 fresh mushrooms, sliced
Lettuce
- 2 medium tomatoes cut into 1/2 inch pieces
- 1 medium cucumber or zucchini, thinly sliced 1/2 T lemon juice
- 1 T toasted sesame 1/4 t salt
1. Cut tofu crosswise into halves.
2. Heat vegetable oil and sesame oil in 12 in skillet and grill tofu pieces on both sides until golden brown. Let it cool and cover and refrigerate about 1 hour.
3. Sprinkle lemon juice onto mushroom slices.
4. Tear lettuce into bite-size pieces. Set aside.
5. Toss mushrooms, tomatoes, cucumbers with 2 T Tofu Mayonnaise.
6. Cut chilled tofu into 3A in (2cm) cubes; toss with 2 T Tofu Mayonnaise.
7. Place tofu into salad bowl.
8. Place vegetable mixture: around tofu; sprinkle toasted sesame seeds and salt on top. Serve with additional mayon¬naise dressing, if you desire.
